Good morning!
The sun is shining brightly on this beautiful spring morning. What better way to celebrate the first full day of Spring than with a breakfast of Triple Berry Crumb Cake! Fresh strawberries, blueberries & raspberries enfolded in an easy to make batter of delicious goodness!
Triple Berry Crumb Cake
3 cups flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh diced strawberries
1/2 cup fresh blueberries
1/2 cup fresh raspberries
1 cup sugar + 1 tablespoon, divided
1 1/4 cups whole milk, room temperature
2 large eggs
2 sticks butter, melted
Preheat oven to 375 °F. Grease a 9” square baking dish. In a large bowl, sift the flour, baking powder, baking soda and salt. Combine the strawberries, blueberries & raspberries. Sprinkle fruit with one cup of sugar and toss gently. In another bowl whisk the milk, eggs & melted butter. Pour the milk mixture into the flour mixture and mix gently (don’t over-mix); mixture will not be smooth. Gently fold in the sugared berries. Pour into an 8” square baking pan. Sprinkle with the additional one tablespoon sugar. Bake 45-50 minutes or until knife inserted into center comes out clean. Enjoy with a cup of coffee or tea or milk!
