Dinner isn’t always an event, although I love it when it is. However, It’s been a long day and a late night. I spent the day spring cleaning even with the snow outside. I am now ready for Spring!!! Thank God for the nourishment of Chicken soup!!! Now I am ready to cook and share.
Like I said, today was full of cleaning winter clutter and dust that only the sun can reveal! So I made my life easy with my quick version of Chicken soup. It all began with a rotisserie chicken…
Part of the cleaning process for me is the Fridge. I love on those busy days to pick up a chicken that is full of flavor and ‘already cooked’.. Boy did that come in handy today when I was tired and hungry.
Take what is left of your Rotisserie and place it in a stock pot. Cover with water and simmer.

1/4 cup celery (today it was a 1/4 tsp of celery salt) I cheated!
1/2 cup chopped carrots
Simmer soup until it reduces by 1/3 to a 1/2 of the total.
Boil 1/2 box desired noodles (I used macaroni, but I was also cleaning out the pantry)
Remove chicken carcass and strain broth; reserve veggies.
Incorporate the chicken and the broth with the veggies.
Add noodles to your serving bowl before adding the broth, otherwise you will have enormous noodles and no broth.
So good and so comforting! I am ready to read and sleep!
