Chicken Cheddar Burgers with Mango Salsa

I love a good burger and these ended up fitting the bill! I chopped up the cheddar cheese into small squares and added them to the ground chicken before shaping into burgers. The cheese melts while the burger cooks infusing it with moisture and more flavor…


Chicken Cheddar Burgers with Mango Salsa

Chicken Cheddar Burgers with Mango Salsa

1 lb ground chicken
1 teaspoon + Badia Poultry Seasoning Southern Blend
salt & fresh ground pepper
3 oz sharp cheddar cheese, cut into small cubes
1 ripe mango, peeled & chopped into small cubes
1 ripe plum tomato, cut into small cubes
2 thin slices of red onion, cut into small cubes
1 lime, zest & juice
2 Brioche Burger Buns

Place the ground chicken in a mixing bowl; add one teaspoon poultry seasoning & season with salt & fresh ground pepper. Add the cheddar cheese cubes and mix gently. Shape into 2 large burgers. Cook the burgers 4-5 minutes on each side (you can use an outdoor grill, a grill pan or a skillet). Meanwhile combine the cubed mango, tomato & red onion in a bowl; add the zest and the juice of the lime and season with salt and fresh ground pepper. When the burgers are done place the buns on the grill for just a minute or two to toast them with grill marks. Top buns with Chicken Cheddar Burgers and Mango Salsa. Serve immediately. Makes 2 big burgers.
