Grilled Tomato Caprese Salad

A Caprese Salad is one of my favorites…and if you’ve never tried grilling the tomatoes before layering them into the salad then it’s time you did…the grilling brings out the sweetness of the tomatoes…truly delicious! Heidi will be sharing another version of Caprese Salad on Thursday…it’s amazing how different a small change can make!

Grilled Tomato Caprese Salad
2-3 large Beefsteak tomatoes
extra virgin olive oil
salt & fresh ground pepper
12 slices fresh mozzarella cheese
12 leaves fresh basil

Slice the tomatoes relatively thick into 12 slices. Brush both sides with extra virgin olive oil and sprinkle with salt and fresh ground pepper. Heat a grill pan on high. Grill the tomatoes on both sides a few minutes until grill marks form. On a platter, alternately layer the grilled tomatoes, the mozzarella cheese slices and the fresh basil. Serve immediately. Serves 4.

  1. Wow Linda – I just regretted reading this turning some amazing Russian tomatoes into a plain sauce – they would have been perfect for this recipe. I’ll have to keep it in mind for my next Italian feast!
