I’m not a huge fan of flounder so I adapted the typical flounder stuffed with crab recipe to Crab over Tilapia for dinner last night with our friends. Everyone went wild over it and I felt like a champ! It’s always a good feeling when you’ve satisfied your guests.
Crab Over Tilapia
6 pieces of Tilapia
6 Tbs of butter
16 oz really good lump crab meat
1 Tbs Dijon mustard
2 tsp Worcestershire sauce
1 lemon juiced
1 cup mayonnaise
2 tsp horseradish
1 Tbs Old Bay
1 Tbs parsley
1 large egg
1/4 tsp celery salt
3 slices white bread, put in blender
Heat oven to 325°F. Drain the crab meat and gently pick through it to make sure there are no residual shells. In a mixing bowl add the mustard, Worcestershire, lemon juice, mayonnaise,old bay,parsley, egg, celery salt and bread before adding the crab. Gently combine the crab into the mixture and form into 6 half cup sizes.
Melt the butter and dredge each of Tilapia in the butter then place on a sheet pan. Lightly salt & pepper each piece. Top each piece with the crab mixture and bake in the oven for 18 to 20 minutes. Serve with a salad and enjoy… Delicious!
