Homemade Pita Bread With Greek Marinated Pork

This was a dish I used to make for my kids when they were hungry teenagers. I will admit that I used to buy my pita bread but it is so easy to make and it’s so much better than the store bought ones that now I make my own, (well sort of, I could make my own pizza dough, but this time I didn’t).

Homemade Pita Bread With Greek Marinated Pork
raw pizza dough thawed from the grocery store and cut into 8 equal pieces
4 Tbs olive oil
2 Tbs fresh lime juice
2 Tbs crushed garlic
1 Tbs Dijon mustard
1 tsp dill
1 tsp salt
1 tsp pepper
1 avocado sliced
1 sweet onion diced

Tzatziki Sauce
1 seedless cucumber, grated and drained
2 cloves garlic, minced
1 lb plain Greek yogurt
1 tsp salt
1/2 cup sour cream
2 Tbs red wine vinegar
juice from 1/2 lemon
2 tbs olive oil
1/4 cup fresh dill, chopped
1/2 tsp pepper

Add the Greek yogurt to the bowl along with the rest of the ingredients. Mix well and set aside.

Place the pork in a zip lock bag with 2 Tbs olive oil, lime juice, garlic, mustard, dill, salt & pepper and set aside.  In a cast iron skillet heat 1 Tbs olive oil medium to medium high heat. Roll out one of the dough pieces to 1/4 inch round and cook in the skillet for 2 to 3 minutes then flip over and do the same on the other side. Flip the dough one more time and you will see the dough puff up. Once the air pocket is created on the inside the pita is done and you can continue the process with the other 7 dough pieces. Next in the same skillet heat the other half of the olive oil. Remove the pork from the bag and discard the marinade. Cook the pork in the skillet for about 8 minutes or until the pork is cooked through. Place in the pita and serve with avocado, onion and Tzatziki Sauce. Delicious!
