It’s Taco Tuesday! My favorite day of the month when I experiment with new and different flavors for tacos…This is another taco that I found on a menu from Fuego Tortilla Grill. I’ve never actually been there but I sometimes will spend time just perusing restaurant menus to get ideas and this one grabbed my attention. It’s called Cowboy Tacos and it listed Dr. Pepper BBQ sauce as one of it’s ingredients…that sounds tempting…doesn’t it!? But why let all the Cowboys have the fun? Here’s my spin on this taco which I’m gladly renaming Cowgirl Tacos!
Cowgirl Tacos
1 lb ground turkey
1 tablespoon extra virgin olive oil
1 small yellow onion, chopped
2 garlic cloves, minced
salt & fresh ground pepper
1 cup Dr. Pepper
1/4 cup ketchup
2 tablespoons white wine vinegar
3 tablespoons brown sugar
2 tablespoons Worcestershire sauce
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/2 teaspoon dry mustard
4 ears of fresh corn on the cob, shucked
1 tablespoon butter
1 red onion, cut into half moon rings
1/4 teaspoon chipotle chili powder (or more if you like it hot)
1/2 teaspoon sugar
1/4 teaspoon salt
1/2 cup heavy cream
1-2 cups shredded Monterey Jack cheese
8 small flour tortillas
Sauté the ground turkey, diced onion and garlic in the hot oil 5-7 minutes. Add the Dr. Pepper, ketchup, vinegar, brown sugar, Worcestershire sauce, salt, paprika, chili powder and dry mustard. Bring to a boil; reduce heat and simmer at least 10 minutes to allow the sauce to thicken.
Make the Chipotle Creamed Corn: Bring a pot with water to boil. Add the corn and boil 3 minutes. Remove from heat and immediately place on a grill pan to char the corn on all sides (~ 8 minutes). In a skillet, melt the butter and sauté the red onion until tender (~ 5 minutes). Slice the corn off of the ears into skillet with the red onion. Sprinkle with chipotle chili powder, sugar and remaining salt. Sauté one minute. Add 1/2 cup heavy cream. Bring to a simmer and cook a few minutes until thickened. Heat the flour tortillas as package directs.
To assemble Cowgirl Tacos: Place warm tortilla on plate. Spoon on Dr. Pepper BBQ Turkey, Chipotle Creamed Corn and sprinkle on shredded Monterey Jack Cheese. Fold and serve…DELICIOUS!!
