Whenever I go to a festival I always look for a Gyro. Well, this is my homemade version of my favorite fair food! My Hubby had never had one before and he loved it! I liked it even better because it gave me all the flavor with more of the veggies and less of the fat.
Chicken Sausage Gyro With Goat Cheese & Tzatziki Sauce
3 chicken and spinach sausage
1 onion
3 tomatoes
4 + cups spinach
1/2 cup chicken stock
2 Naan bread
1 cup Tzatziki sauce (recipe at the end)
1/ cup creamy goat cheese
Dice the tomatoes and chop the onions. Slice the chicken sausage vertically in thin slices discarding the outer parts for another time, (omelet, panini, soup…). In a cast iron skillet cook the chicken until browned on both sides. Remove from the pan and cover to keep warm. In the same skillet add the spinach with 1/2 cup chicken stock to wilt the spinach and deglaze the pan catching all the flavors.
Heat the Naan bread to make it pliable. Place it half on/half off a piece of parchment paper. First layer the chicken sausage, then the spinach, next the tomatoes and onions, top with the creamy goat cheese and Tzatziki Sauce.
Make the Tzatziki… Best made a day ahead!
Tzatziki Sauce
1 seedless cucumber, grated and drained
2 cloves garlic, minced
1 lb plain Greek yogurt
1 tsp salt
1/2 cup sour cream
2 Tbs red wine vinegar
juice from 1/2 lemon
2 tbs olive oil
1/4 cup fresh dill, chopped
1/2 tsp pepper
Add the Greek yogurt to the bowl along with the rest of the ingredients. Mix well and serve. This sauce can also be used as a dip. Fold the parchment paper together and roll the edges. Fold the bottom over and eat. Want a bite??? Delicious!!! Note: You could also add this meal to your Taco Tuesday Collection!
