Over the past week my nephew Michael was staying with us (Heidi’s son actually!) and he and my sons wanted something cold and sweet…this is what I came up with for dessert! It was so light and fluffy with a delightful chocolate flavor…
Chocolate Mousse Pie
Oreo Crust (store bought)
1 cup chocolate chunks
4 oz cream cheese, softened
1/2 cup confectioner’s sugar
1 teaspoon vanilla extract
16 oz tub Cool Whip, thawed
chocolate shavings for garnish
Place the chocolate chunks in a microwave safe dish and microwave for a minute or two until soft. Stir until melted. In a large bowl, blend the softened cream cheese with the confectioner’s sugar and vanilla until smooth.
Blend all but one cup of the Cool Whip into the Cream Cheese mixture. Place the melted chocolate in a second mixing bowl. Scoop half of the Cool Whip-Cream Cheese mixture into the melted chocolate and blend to combine.
Spread the chocolate mixture into the prepared Oreo crust. Spread the remaining Cool Whip-Cream Cheese mixture on top.Β Top with reserved Cool Whip.Β Sprinkle with chocolate shavings and refrigerate 2-4 hours until nicely chilled. Slice and serve.
