The zucchini are here!!! All our plants are blooming beautifully and we love to eat them…like everyone I suspect. We love to make and serve them like spaghetti. What a brilliant little device we use! In any case, I decided to make them with my shrimp scampi sauce. So good I’m not sure my hubby will want his zucchini any other way…light to the tummy and pleasing to the palate!
Zucchini Spaghetti Shrimp Scampi
1 Lb shrimp
2/3 cup shrimp sauce (made by half)
4 Tbs butter
3 cloves garlic
1 tsp old bay
1 tsp celery salt
salt & pepper to taste
Clean the shrimp and use the shells to make the shrimp broth…see link above.
Melt the butter on low with the garlic for 5 minutes. Add the shrimp broth.
Use a zucchini spaghetti maker (or buy it pre-made from the prepared section in the produce department). In a separate pot, heat 4 cups of salted water to a boil. Add the spiraled zucchini, cover and cook for 1 minute. Remove from the heat and let sit in the pot covered for 2 minutes more before draining.
Remove the sauce from the skillet. Cook the shrimp for one minute on each side. Return the broth to the shrimp. Place the drained zucchini in a serving dish, pour over the shrimp and sauce and squeeze on some lemon. Top with Parmesan and serve. Delicious!!!
