This not so little burger was messy, juicy and jumping with flavor! Napkins are a must with this healthy burger. It’s also a great way to get greens into your day…even for the kiddo’s. The mayonnaise is outstanding and the dollop of my homemade pesto took this burger off the charts. A great burger for this holiday weekend…
Spinach Turkey Burger With Mango Mayonnaise & Grilled Pineapple
2 lbs ground turkey
1 can chunked mangoes, drained
4 slices pineapple
1 onion sliced
4 cups fresh baby spinach
8 artichoke heart halves
1 cup mayonnaise
8 slices American cheese
2 tsp salt
1 tsp pepper
Heat a cast iron grill pan on medium high.
Chop the artichokes and spinach then mix them in with the ground turkey along with the salt and pepper. Form into four patties and cook on the grill 5 minutes on each side.
Grill the pineapple slices on each side for 3 to 4 minutes. Add the pineapple on top of the burgers.
In a blender add the mayonnaise and drained mango. Blend until smooth and smother both the top and bottom of the bun. Add a dollop of Perfect Pesto on one side of the bun. Add the burger to the bun, top with some cheese and some grilled onions. I just throw a few slices on the still hot grill pan for a few minutes.
Wow… Talk about delicious!
