Pork Patties with Bacon over Cheddar-Honey Polenta
1 lb ground pork
1/2 teaspoon salt
1 teaspoon coriander
1/2 teaspoon fennel seeds
4 slices bacon
1/2 cup instant polenta
1/2 cup light cream (or milk)
1 cup chicken stock
1/2 cup shredded cheddar cheese
2 tablespoons honey
Cook bacon until crisp. Drain bacon drippings. Season ground pork with salt, coriander and fennel seeds. Shape into burgers. Cook 5 minutes each side.
Bring the light cream and chicken stock to a boil in a medium saucepan. Add the instant polenta and stir to combine. Remove from heat and add the shredded cheddar and honey. If polenta is too thick add a bit more cream or chicken stock to thin slightly.
Scoop some polenta onto a plate. Top with pork patty, bacon and some shredded cheddar cheese. If desired, spoon a little of the pan drippings on top. Eat.
