My idea of fast food when I was raising my kids and too busy to plan a meal was to pick up a rotisserie chicken and go through the Wendy’s drive through for baked potatoes with broccoli (no cheese). It was with leftover chicken that this dish was born. Simple, delicious and a winner with the kids. I still use rotisserie chickens when I am short on time because they are so full of flavor. Rotisseries also make great chicken stock for soups and sauces…
Chicken Parmesan Croquettes
1 rotisserie chicken
1 egg
1/2 cup bread crumbs
1/2 cup shredded Parmesan cheese
1/4 cup Chardonnay
1/3 cup roasted garlic
1/4 cup mayonnaise
1/4 cup chicken stock
2 tbs dried oregano & sun dried tomatoes
salt and pepper
1 cup desired tomato sauce
3/4 cup Gouda
Cut up the chicken into tiny pieces. In a mixing bowl mix chicken with first 9 ingredients until everything is well blended. Preheat oven to 350 °F. Form mixture into six patties and fry in a skillet until golden. Top with tomato sauce and mozzarella cheese and put in the oven for 15 minutes.
I served this dish with spaghetti and marinara sauce.
