Chicken Parmesan Croquettes
My idea of fast food when I was raising my kids and too busy to plan a meal was to pick up a rotisserie chicken and go through the Wendy’s drive through for baked potatoes with broccoli (no cheese). It was with leftover chicken that this dish was born. Simple, delicious and a winner with the kids. I still use rotisserie chickens when I am short on time because they are so full of flavor.
