Buffalo Chicken Tacos

It’s Taco Tuesday! My boys have been enjoying Buffalo Chicken everything lately; tenders, pizza, stromboli. So for this Taco Tuesday I decided to turn our tacos into Buffalo Chicken Tacos! Seasoned ground chicken with a buffalo sauce and a creamy blue cheese blend…good stuff! Here’s to a new addition on the Taco Menu…

Buffalo Chicken Tacos
1 tablespoon extra virgin olive oil
2 lbs ground chicken
1 teaspoon poultry seasoning
1 teaspoon Montreal steak seasoning
1/4 teaspoon celery salt
1/2 teaspoon salt
2 garlic cloves, minced
1/2-3/4 cup Ken’s Buffalo sauce (or your favorite brand)
1/4 cup sour cream
1/4 cup blue cheese crumbles
1/4 cup mayonnaise
soft taco shells
1 carrot, diced tiny
1 celery rib, diced tiny

In a large skillet, heat the oil on medium-high heat. Sauté ground chicken in hot oil until cooked; adding the poultry seasoning, steak seasoning, celery salt, salt & garlic as it browns. Stir in the buffalo sauce (you can add more or less depending on your tastebuds). Heat through (5-10 minutes) to combine flavors.

Meanwhile, combine the sour cream, blue cheese and mayonnaise into a food processor. Process until smooth. Place the Blue Cheese Sauce and diced carrots & celery into small serving bowls.

Heat the tortillas as package directs. To assemble: Place cooked Buffalo Chicken on heated tortilla, spoon on the blue cheese sauce and sprinkle with desired amount of diced carrots & celery. Add additional Buffalo Sauce if desired.
