If you’re anything like me you are already gearing up for the Christmas Holiday. I’m tweaking ideas for the many dinners we will be having and the easy dishes for the Big Day! It’s good to have a trial run with your recipes that you intend to make for your guests if you want to do new things. Knowing in advance how it turns out will just make you look like a pro to family and friends. It will also tell you if it’s too complicated for a crowd and how you can make it more simple. My hubby and I love this appetizer and we sometimes have it for our entire meal. I’m making this as the salad for my Christmas table with one pear instead of two, but it can also be served on a platter as an appetizer. I hope you enjoy this simple trial run with me…
Bundle Wrapped Pear Salad
(this salad is made for 2 to 4 people)
1 pear
1/2 cup creamy goat cheese
1-2 tsp tarragon (fresh or dried, mine is dried from my garden)
4 thin slices of bacon
salt and pepper to taste
2 to 3 cups baby greens
1/4 cup red wine vinaigrette
Preheat oven to 400 °F. Quarter the pear and remove the core section on each piece. Top each pear piece with an even distribution of the goat cheese, some tarragon and a pinch of salt and pepper.
Wrap each pear piece in a slice of bacon until it is completely bundled. Bake in preheated oven for 15 to 20 minutes on the middle rack until bacon is brown and crispy. Serve right away on a bed of greens and top with vinaigrette. This little dish is sure to impress!
