Classic Greek Salad

Fewer things are more classic than Ancient Greece, except for maybe…a delicious Classic Greek Salad! Using the freshest ingredients, this salad is deliciously crunchy and healthy. It’s going into the new salad rotation!  

Classic Greek Salad
1 cup grape tomatoes, halved
1 cucumber, diced
1 cup marinated black Kalamata olives, pitted (preferably from the deli salad bar – not canned, add some of that delicious marinated juice to your container!)
1/2 red pepper, diced small
1/2 green pepper, diced small
1/2 red onion, half, diced small
5-6 cups Romaine lettuce, washed & chopped
Fresh Feta cheese (preferably from the deli cheese area!)
Dressing of your choice * (Classic Olive/Vinegar recipe below)

Dice everything bite sized. Layer the Romaine lettuce on a large plate or platter. Top with the the tomatoes, olives, diced red & green peppers, diced red onions and Feta cheese.

I use a delicious a Greek Yogurt Kalamata Feta Dressing from OPA or you can top the salad with your favorite dressing or use this classic recipe…

* Classic Greek Dressing
4 tablespoons extra virgin olive oil
2 tablespoon red wine vinegar
1 garlic clove, minced
1/2 teaspoon fresh oregano (or dried)
2 tablespoons juice from the Kalamata marinated olives (deli salad bar)
salt & pepper to taste

Combine all the ingredients in a small mason jar with a lid. Shake well and pour over Classic Greek Salad.
