As you know I love to make all different kinds of rice to keep the hubby happy! He prefers rice over potatoes so I’ve been kept on my toes trying to think of creative ways to use rice. Cilantro Lime Rice
1 tablespoon extra virgin olive oil
1/2 vidalia onion, diced
1 garlic clove, minced
1 1/4 cups rice
1 lime, zest and juice
1/4 cup chopped fresh cilantro
1/2 teaspoon salt
2 1/2 cups vegetable stock
In a medium saucepan, heat the oil on medium-high. Add the diced onion and sauté five minutes. Stir in the garlic and sauté another minute. Add the rice, lime zest, fresh cilantro and salt.
Sauté a few minutes. Add the vegetable stock. Bring to a boil; reduce heat and cover. Allow to simmer until rice has absorbed all the chicken broth (about 15-20 minutes)
Scoop rice onto serving dish and squeeze with lime juice.
