Now on to today’s Fiesta Friday contribution! Irish Stew is one of the very first dishes I make every year when it starts to get a little chilly in the fall. This is a stew we made at our restaurant many years ago and one that I still make at home today. It is more simple than our restaurant version because I use a condensed consume instead of making a demi-glace that would take 2 – 3 days to make, but it is perfect for my home version. I love pecans in almost anything, but when I put them in this stuffing it just sent these chops to a whole new level. Making the simple pocket saves the struggle of stuffing the whole loin and is a simple solution for a quick dinner night. Corn & Pepper Jack Cheese Chowder

On Wednesday I made a terrific Spinach & Creamy Spinach Soup. Today’s soup is equally delicious but with a kick! It’s the perfect blend of sweet and hot! The corn brings this beautiful sweetness at the front, then after two or three bites you start to notice a little heat! A very balanced corn soup.
