Baked Shrimp With A Lemon & Tarragon Mayonnaise

Baked Shrimp With A Lemon & Tarragon Mayonnaise 1
I like to entertain, but I do try to keep things simple. Baking the shrimp instead of boiling them takes way less time and ends up perfect every time.  Then, instead of the same old cocktail sauce (although I served that too), I made a mayonnaise-based sauce for dipping. My guests went crazy over it and the cocktail sauce was left untouched! The best part was that this time I got to share it first-hand with my Fabulous Fare Sister…Linda…she was there too! If you’re serving shrimp – try this method…and the sauce is better if made a day ahead, which is always nice…  Continue reading

Stuffed Pepper Soup

Stuffed Pepper Soup 1.jpg
It was time to clean the refrigerator… again! Easter is fast approaching and as you know you have to make room for more food. While I was working on the freezer I pulled out a bag of green peppers I had poached and frozen at the end of our garden season last summer. Time to use the peppers. Then in the refrigerator I had a big container of rice from the Chinese takeout I had gotten for my son the night before… that’s right, My Hubby and I had a date night so my son got take out. He never eats the rice so I just thought…peppers… rice… stuffed pepper soup! I used ground turkey because that’s what I had on hand. It turned out so good and my Hubby went wild for it! Today I’m revisiting one of my favorite Mac & Cheese dishes. Originally posted almost two years ago, this is comfort food all the way….STOP THE CLOCK AND TAKE THE PHONE OFF THE HOOK!!! Wow is this Mac & Cheese Good! If you haven’t heard me say it before, you’ll hear me say it now… I love mac & cheese. So far this is absolutely my favorite! Yummy, delicious, can’t get enough. Even my Hubby who is not a fan of all things ‘Buffalo style’ had three helpings. Here, have a biteContinue reading

Sage & Mushroom Stuffed Chicken Roulade

Sage & Mushroom Stuffed Chicken Roulade
This is a nice dish to make when you have guests over. It can be prepped in advance so when your guests arrive it only needs a quick sear and a toss in the oven. It’s also good for lunch with the girls as small plates. All I did was slice them up when done and served just a few slices with salad on the side. They go a long way and are loved by all. Sautéed Calamari In Brown Butter

Sauteed Calamari In Brown Butter 1
Date nights are my favorite nights!!! I love to get all dolled up for my Hubby and go out for a glass of wine and a little bite (that I didn’t have to cook!)…One of the dishes we get at Moon & Raven Public House is their Sautéed Calamari. Well, it’s tax season and my excellent Hubby is a CPA. He and his partner, along with their excellent staff, are cranking day and night-  so Date Nights Out are a little more rare. Wanting to have Sautéed Calamari, I decided to come up with a dish of my own inspired by one of our favorite dishes. Late Night Date Night at home… Continue reading

Creamy Polenta with Seared Scallops

Creamy Polenta with Seared Scallops
My Hubby loves mashed potatoes… He would eat them every day if I made them. Well instead of mashed potatoes this time I made very creamy polenta. Granted it takes a little longer to reach this perfect creamy consistency, but the flavor of the polenta is rich and delicious. Pair it with some seared scallops and you have greatness!
