Today I’m revisiting one of my favorite Mac & Cheese dishes. Originally posted almost two years ago, this is comfort food all the way….STOP THE CLOCK AND TAKE THE PHONE OFF THE HOOK!!! Wow is this Mac & Cheese Good! If you haven’t heard me say it before, you’ll hear me say it now… I love mac & cheese. One night I sat down with a glass of wine (or two) and wrote down all the ways I might want to enjoy this delicious taste of heaven… Now every month I make a new one for me and for you. So far this is absolutely my favorite! Yummy, delicious, can’t get enough. Even my Hubby who is not a fan of all things ‘Buffalo style’ had three helpings. Here, have a bite

Buffalo & Gorgonzola Mac & Cheese
1 Lb Campanelle Pasta Noodles
1/2 cup Gorgonzola cheese
1/2 cup butter
1 Tbs flour
4 oz cream cheese
1 cup whole milk
1 Tbs ranch seasoning
1/2 cup hot sauce
3/4 cup cheddar cheese
1 cup french fried onions

Preheat the oven to 375°F and cook the pasta according to the package directions. In a sauce pot brown the butter to a rich dark brown then remove from the heat and add the flour and stir. Stir in the milk and return to the heat keeping it on medium low. Next add the cream cheese, Gorgonzola and 1/4 cup of the cheddar cheese along with the ranch seasoning. Drain the pasta and add to the cheese mixture. Next add in the hot sauce and remove from the heat. Pour into an oven safe baking dish and top with remaining cheddar cheese and french fried onions. Bake for 20 – 25 minutes until the top is golden and the cheese is melted. Delicious!

  1. Laura, this mac and cheese is crazy good! All my kids and step kids request it all the time… I don’t mind because I get to eat it too!!!
