There is something kind of romantic about serving a Cornish Hen to your Honey. Smothered in butter and lots of sage from the garden this dish just serves up yummy goodness. With a side of love and potatoes… It was the perfect date night meal…

Cornish Hens With Sage Butter
2 Cornish Hens
1/2 cup chopped sage
1/2 cup chopped parsley
3 chopped garlic
1/2 tsp celery salt
1 onion sliced thinly
4 slices Sourdough bread
salt & pepper
1 softened stick of butter
1/2 cup low sodium chicken stock + more if needed.

Preheat your oven to  325°F. Dry the Cornish Hens with paper towels and salt & pepper the inside of the cavity then place one piece of Sourdough into each cavity. Set aside. In a small bowl mix the herbs, garlic, celery salt and salt & pepper with the butter. Rub the butter all over the Hens. In a cast iron pan place remaining slices of bread and sliced onions. Place a hen on each slice of bread and add the chicken stock to the bottom of the pan. Cook for one hour fifteen minutes. Remove from the oven and allow to rest for about twenty minutes. Delicious!
