Sadly summer is coming to an end with the fast approaching Labor Day just one week away. We will be having a lot of family over so I decided to experiment on a slow cooker dish that is fun and not labor intensive. Yes, we have a winner!
Slow Cooker BBQ Chicken Legs
1 large package of chicken legs
Barbecue Sauce
4 garlic cloves minced
1/2 cup diced onion
1 Tbs butter
1/2 cup water
3 Tbs cider vinegar
2 Tbs Worcestershire sauce
1/2 lemon juiced
1/4 cup brown sugar
1 1/2 cup ketchup
1 Tbs smoked paprika
1 Tbs cinnamon
1/4 cup yellow mustard
1 cup orange juice
salt & pepper
Heat the butter in a cast iron skillet. Add the garlic and onions and cook until they begin to caramelize. Begin to add the rest of the ingredients and stir; cooking for about 10 minutes.
Place the chicken legs in your slow cooker and cover with half the barbecue sauce. Add 1/2 cup of water and cook on low for 8 hours or high for 6 hours. When the chicken is done, place in a single layer on a sheet pan and place under the broiler for eight minutes until the chicken caramelizes. Serve with a side of cucumber salad… Delicious!
