Spicy Baja Burger

It’s Burger Time! On today’s menu is a Spicy Baja Burger…a spicy-seasoned burger topped with Pepper Jack cheese, guacamole and sour cream served on a toasted onion roll that’s been slathered with spicy chipotle mayonnaise…delectable and delicious!

Spicy Baja Burger
1 lb ground beef
1/4 teaspoon salt
2 teaspoons brown sugar
1/2 teaspoon chipotle chili powder
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon coriander
1/2 teaspoon dried oregano
4 slices Pepper Jack / Monterey Jack cheese
1/2 cup mayonnaise
1/2 teaspoon chipotle chili powder
4 onion rolls
1/2 cup guacamole
1/2 cup sour cream

Season the ground beef with the salt, brown sugar, chipotle chili powder, onion powder, garlic powder, coriander and dried oregano. Mix gently; shape into three or four burgers depending on the size burger you want. Cook burgers 4-6 minutes each side in a hot grilled pan. Top with the Pepper Jack cheese slices and allow to melt slightly. Meanwhile mix mayonnaise with remaining chipotle chili powder. Toast onion rolls. To assemble: slather tops and bottoms of toasted onion rolls with spicy chipotle mayonnaise. Place burgers on rolls. Divide guacamole and sour cream among the burgers. Top with toasted onion roll. Yummy!
