It’s always sweet corn season in my house! It’s the only time of year I eat corn, so to elongate the season I buy lots of it, shuck it and freeze it until it’s all eaten! I tend to make too much every time I cook it so I can dress it up the next day or make a great soup. Well today I made a fresh and refreshing corn salad. It is not only appealing to the eye, it tastes great too…
Fresh Corn Salad With Avocado & Herb Dressing
4 ears lightly cooked corn on the cob
1/2 cup diced red onion
1/2 cup diced roasted red peppers
1 avocado diced
1 Tbs fresh chives
1 Tbs fresh parsley
1/2 tsp fresh oregano
1 lemon juiced
1 Tbs red wine vinegar
2 Tbs olive oil
salt & pepper
Cut the corn off the off the cob making sure not to cut into the cob. Add all the rest of the ingredients and stir together. Serve up in a pretty dish and eat… Delicious!
