These Apricot Ginger Carrots are the perfect side dish for any meal…glazed in a tangy sauce with just a hint of a crunch…
Apricot Ginger Carrots
6 carrots, peeled & cut on the bias
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 garlic clove, minced
2 teaspoons Balsamic Vinegar
1/4 cup Apricot Preserves
Heat a medium skillet on medium heat. Add the carrots and butter. Season with salt and sauté 10-12 minutes until carrots are tender crisp. Season with the ginger and add the garlic clove. Sauté another minute or two. Stir in the balsamic vinegar and apricot preserves. Heat through. Serve hot!
