I had a craving for a big bowl of salad – so I checked out my fridge to see what I could add to make it super yummy… I ended up roasting cauliflower with the ‘power’ spices and adding potatoes, zucchini and red onion along with a few shavings of Parmesan cheese… any dressing can top it off! Today I am sharing a tasty chicken thigh dish with the flavors of Thai! Turmeric, chives, basil, ginger and soy sauce with honey added for sweetness and caramelization…another winner to add to the endless Chicken Repertoire!
Sometimes you just need to pull together something real quick…there’s probably nothing as quick as a stir fry. Use whatever vegetables you find in your fridge and simply season the chicken before tossing in the stir fry. It’s another tasty and healthy addition to the menu.
