Apricot Ginger Carrots
6 carrots, peeled & cut on the bias
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon ground ginger
1 garlic clove, minced
2 teaspoons Balsamic Vinegar
1/4 cup Apricot Preserves
Heat a medium skillet on medium heat. Add the carrots and butter. Season with salt and sauté 10-12 minutes until carrots are tender crisp.
Season with the ginger and add the garlic clove. Sauté another minute or two. Stir in the balsamic vinegar and apricot preserves. Heat through.
