Potato, Sausage & Kale Soup
1 package breakfast sausage
2 cloves garlic, chopped
1 1/2 onion, diced
6 cups chicken stock/broth
5 large white potatoes
1 tsp red pepper flakes
1 tsp celery salt
5 large stalks fresh kale, stalks removed

Peel, dice and par boiled the potatoes until fork tender in salted water. Drain and set aside. In a separate soup pot, remove the sausage from the casings and cook with the onions, making sure to break the sausage into little pieces. Next add the garlic and cook for 5 minutes more. When the onions become translucent, add the chicken stock, celery salt, red pepper flakes and potatoes. Bring to a boil. Add the kale, cover with a lid and lower the heat to a simmer for 10 minutes.

Dish up and eat! Simple and delicious!

  1. I would have to use spinach in this as the hubs has now forbid me to use kale in soups anymore. He hates the stuff, lol. But he likes spinach? Who knows… 🙂 This reminds me a little of a soup that is served at Olive Garden.

    1. That is exactly what I was thinking when I made it! My Hubby refuses to every eat in Olive Garden, (or any chain restaurant for that matter,) so I have to re-create my favorite dishes at home.. Lol!!!
