Here’s a quick and delicious Rice & Black Bean recipe to add to your ‘Latin-food’ repertoire!
Rice & Black Beans
1 onion, diced
2 garlic cloves, minced
1 tablespoon extra virgin olive oil
1 cup rice
1 teaspoon cumin
1 teaspoon Goya adobo
1/2 teaspoon salt
2 1/2 cups beef broth
15.5 oz can black beans, drained & rinsed
In a medium saucepan, sauté onion and garlic in hot oil on medium heat for five minutes. Add the rice, cumin, adobo and salt. Sauté 2 more minutes. Pour in the beef broth.
Stir in the black beans. Bring to a boil; reduce heat, cover and simmer about 15 minutes until rice is tender.
Serve hot. This is a great accompaniment to any entree. Enjoy!
