Who doesn’t love lasagna. I find this easy roll up version to be great for entertaining due to the perfect individual sizes. It also becomes great for changing the inside flavors. For instance along with the spinach version I made a turkey sausage version. The possibilities are endless so I suggest you roll with it… Hahaha! Continue reading

Italian Turkey Sheet Pan Meatloaf

The day I learned about sheet pan meatloaf was a Great day! In college I would roast a chicken and make a turkey meatloaf every Sunday. Turn the oven on once and make food for the week. I still love to have meatloaf sandwiches so this sheet pan idea is fantastic. Meatloaf in 20 minutes! You can apply any recipe you have, I just decided to go Italian today. Continue reading
‘The Wedgie’ Revisited

In my early college years at IUP, Indiana University of Pennsylvania, there was this little pizza shop called Romeo’s within walking distance of campus that we loved to frequent. The most popular item on the menu and something I had never heard of before was…’The Wedgie’. It was a pizza and a hoagie combined. I shared a Wedgie recipe back in 2015 but for today’s post I decided to make it with the new store bought Cauliflower Crust Pizzas that are in the frozen section at my local grocery store. It was much healthier and very delicious!!! Continue reading
Pork Loin Sandwich with Roasted Red Pepper Mayo & Arugula Salad

I made this sandwich originally with leftovers and my Hubby just loved it, so now I make it on purpose for him sometimes at our daily lunch date. The pork loin is tender and lean and the roasted red peppers give a sweetness while the dijon and arugula give it a nice bite. I just love happy accidents… Continue reading
Pepperoni & Cheese Soft Pretzels: Revisited

Linda’s post put me in mind of a previous blog I did in January of 2017. And… Since it is tax season again, I am back to catering to all the employees at my Hubby’s firm on Fridays. They work so hard and I love to spoil them, so this Friday I will make a new version along with a hearty soup and share next week… but here is the previous blog post from 2017…
“When I lived in Philadelphia I would go almost every day to a corner vendor for a Philly soft pretzel for lunch. I’m sure it wasn’t the best thing to do, but it certainly fit my college budget! I sometimes get the hankering for a good homemade soft pretzel. Today I made them a little different. I added pepperoni and cheese!!! Serve with some cheese dip and a little marinara and you have pizza in a pretzel. You can also make little bite size pieces which would be great for your upcoming Super Bowl Party!!” Continue reading
Tubettini Pasta With Wilted Arugula, Shrimp & Toasted Garlic: Revisited

My hubby said this is his favorite and I have to agree. He wants me to make it again tonight! The flavors of the creamy pasta with the freshness of the wilted arugula are a perfect compliment to the lightly seasoned and floured shrimp. Tip this baby off with a little crunchy garlic and POW! Lasagna Soup
I made my Decadent Lasagna With Bolognese for Christmas Dinner this year along with a whole ham. There was about a half a sheet left because I always make too much. Oh well! That’s when I decided to turn it into Lasagna Soup. It was even better in a soup. So if you’re like me and you make too much lasagna, consider turning it into a soup for the next day’s lunch. Continue reading

Bundle Wrapped Pear Salad: Revisited

With all the business of the Christmas Holiday I’ve been engaged with so many activities that cooking has not been a priority. Therefore, today I’ll be revisiting a simple salad that I make for Christmas every year. I hope you enjoy it again…next time I’m making it with fresh apricots and brie wrapped in bacon or pancetta… Continue reading
