Cauliflower Crust Pizza With Gruyère, Bacon & Pesto

Cauliflower Crust Pizza With Gruyère, Bacon & Pesto

Some days it’s good to eat no carbs. I do love my carbs, but today is a carb-less day for me. Here is a pizza you can make and not even miss the crust. Both my hubby and I really enjoyed this one. It’s also good without the bacon and with mushrooms instead… but who doesn’t love bacon!!!    Continue reading

Skillet Seared Asian Marinated Salmon With Soba Noodles

Skillet Seared Asian Marinated Salmon

My Hubby and I love a good piece of salmon and he takes choosing the perfect piece very seriously (it’s quite cute actually). So when we were at the market and I saw him eyeing up the perfect piece, I knew salmon was on the menu. While he usually makes the salmon for us, I wanted to give it an Asian influence so he graciously handed me the reins. This simple dish was served with Soba noodles for even more flavor. I hope you get the chance to enjoy this salmon dish sometime soon. Here is a link to my hubby’s excellent salmon too … My Hubby’s Salmon Continue reading

Italian Poached Eggs With Pesto & Roasted Pine Nuts

Italian Poached Eggs With Pesto & Roasted Pine Nuts

It’s MEATLESS MONDAY! Eggs are a great source of protein for Meatless Mondays. I was in the mood for Italian today, but didn’t want any pasta, so I decided to make eggs with an Italian theme. I served these eggs with broiled Asiago & garlic bread. The yoke mixed with the pesto really added something special to this dish. It was both filling and delicious… Continue reading

Fresh Tomato Sauce

Fresh Tomato Sauce 1

I love this time of year! The days are warm with a beautiful breeze and the evenings are just a little cool. Fall is approaching, the garden is slowing down and the Brussels sprouts will be here soon. This is the time of year when I like to make my own tomato sauce. Although we grow a lot of tomatoes, we did not grow any Roma tomatoes this year. So off I went to the growers market to buy a bushel of meaty Roma tomatoes. Just a tip for my sauce, I do not use any herbs in this first round because I use the sauce in so many different ways. When I am making a dish, that is the time I choose the seasoning and herbs. Just salt and pepper for this round… Continue reading

Pork Tenderloin With A Sage & Onion Cream Sauce

Pork Tenderloin With A Sage & Onion Cream Sauce

Making a delicious quick and elegant meal doesn’t have to take all day. Pork tenderloin is the perfect meat to serve when you are lean on time but want to impress. Served with some herbs in a simple white sauce and you have another winner…

Pork Tenderloin With A Sage & Onion Cream Sauce
1 pork tenderloin
1 Tbs olive oil
2 Tbs butter
2 large onions sliced
2 Tbs flour
1 bunch fresh sage (about 1/4 cup)
1 bunch fresh parsley (about 1/4 cup)
1/2 cup white wine
1 cup whole milk or cream
salt & pepper

Cut the onions in half and slice into half rounds. In a saute pan melt butter and sweat onions until tender. Add the wine, salt & pepper and cook for additional 2 to 3 minutes. Next add flour and cook additional 2 to 3 minutes.

Add the milk, sage and parsley. Cook until the sauce starts to thicken. In a cast iron skillet, heat olive oil and season pork with salt & pepper. Cook for about 6-8 minutes on each side (pork tenderloin has 3 sides and is best served medium).

Top with onion and sage sauce and eat. I serve this with rice on the side. Simple, elegant yet delicious!

Enjoy!

Fresh Corn, Orzo & Roasted Red Peppers Salad With A Bacon Vinaigrette

Fresh Corn, Orzo & Roasted Red Peppers Salad With A Bacon Vinaigrette

We won’t have corn where I live for much longer and I just love summer corn. This salad is perfect for picnics and a great accompaniment to any summer meal. Because it does not have a mayonnaise base it can sit out for a little while and it is even better at room temperature. I hope you get the chance to enjoy this summer delight… Continue reading

Asian Turkey Burger and Red Onion-Iceberg Slaw

Asian Turkey Burger and Red Onion-Iceberg Slaw

Ground turkey is like a chameleon to me… I call it the carnivores ‘tofu’. What is nice about this healthy meat is the way you can make it taste like anything you want. Today I was in the mood for something Asian and I had turkey burgers on the menu… so with a quick scan of my on hand Asian ingredients I kept with the menu and filled my craving too. My hubby was pleasantly surprised with this moist and flavorful spin on this turkey burger… Continue reading
