Honey Mustard & Panko Crusted Satay
Whoever thought of putting food on a stick was a genius. It’s great for parties or just because you can. I’m having another girls get together and wanted something easy, yummy and reasonably healthy. All my friends have had my Rosemary Chicken Satay, so this time I’m giving them a little crunch with the panko crust and a little sweet with the honey mustard. 

Honey Mustard & Panko Crusted Satay
6 boneless skinless chicken thighs
1 1/2 cups panko crumbs
2/3 cup honey mustard
2 tsp garlic powder
2 tsp seasoning salt
1 Tbs parsley
12 skewers soaked in water

Preheat the oven to 350 °F. Mix the herbs and panko crumbs together and place skewers in warm water. Cut the chicken lengthwise and place one at a time in the honey mustard and then the seasoned panko crumbs.

Gently press the skewers through the chicken 2 to 3 times and place on a foil lined baking sheet that has been generously sprayed with cooking spray. Bake the chicken in the oven for 25-30 minutes turning once. Plate and serve with Barbecue sauce or any other dipping sauce you like.
