Louisiana Dirty Rice


Okay, so I was still on a little bit of a Cajun kick! After all if you make the spice mix you may as well use it! With this kick@#$ Creole Rub I decided to make some Louisiana Dirty Rice. This is so filling that it’s a meal in itself…no additional sides needed!  

Louisiana Dirty Rice
1 tablespoon extra virgin olive oil
1/2 green pepper, diced
1/2 yellow onion, diced
2 celery ribs, diced
2 garlic, minced
2 andouille sausage
1 1/2 cups rice
1-2 tablespoons Creole Rub
1-2 tablespoons Worcestershire sauce
1 teaspoon salt
3 cups beef broth
1 cup crushed tomato sauce

In a deep skillet, heat the olive oil over medium-high heat. Sauté the Cajun holy trinity (green peppers, onions, celery & garlic) for 8-10 minutes. Add in the andouille sausage and sauté 5 minutes until sausage is nicely browned.

Stir in the rice and the Creole Rub seasoning, Worcestershire sauce and salt. Pour in the beef broth and the crushed tomato sauce and stir to combine. Bring the temperature up to a boil then reduce the heat to low; cover and simmer until rice is tender and all liquids have been absorbed. Scoop the spicy Louisiana Dirty Rice into a large bowl and serve while hot.
