I have been told that if I were a super hero, I would be called ‘the encourager‘! Criticism often given under the guise of constructive is still just criticism. The result causing one to go down, become discouraged and even causing anger. While the result may eventually cause a positive result, encouraging lifts one up while creating a positive atmosphere for the same result. We believe that lifting up and encouraging those around us not only helps the recipient, it also increases our own energy to be better. Asking questions and allowing yourself to better understand others gives you the tools needed to know how to encourage. That encouragement then empowers others to become their best selves. Keep your eyes and ears open every day and listen to those around you. You will be surprised at how effective your encouragement can be.

This is a dish my mother made for us growing up. Probably created from one of those 70’s throwback cookbooks. I often cringe at some of the ingredients they recommended. Obviously ‘processed’ was the star in every dish. It was surely economical for a family of six however, and mother was always health conscious. I will admit that when I was 7 and this plate was put in front of me… I know I made an awful face!… Alas, we grow up and learn to love the very dishes we shunned as kids. Lasagna Mac & Cheese

Lasagna Mac & CheeseMac & Cheese is a real treat and can be made so many different ways. It’s also a great way to use up leftovers. When I made the wonton ravioli I was left with too much ricotta cheese so I decided to turn it into mac & cheese. Placing them in individual sized dishes is a great way to portion control. I added a little love for my honey with a Parmesan cracker heart. Easy and quick to make.  Continue reading

If we are not heading for something greater in our lives whether big or small, we are not heading anywhere. Stepping out of our comfort zone in even the smallest things can invigorate us to step even further out. Every time we step out into something new we find we have actually expanded our zone with us. As sisters we encourage each other to continue to step out of what we currently know and are learning to trust each other’s talents and weaknesses. What a great lesson to grow in…

Who doesn’t love spaghetti and meatballs! When making it for guests I always had this giant doubt about it. Growing up, it was the one night you never wanted dish duty! Especially when your parents paired you, (me the youngest) with the only boy. My brother had a very good system for looking very busy without doing anything… Seriously, just ask Linda. Anyway, I decided once to just roast the whole thing so I could enjoy my guests and not look at my kitchen with embarrassment as if a peck of tomatoes had just exploded. Parmesan Chicken Cutlet With A White Wine & Mushrooms Sauce

I think I’m kind of into chicken cutlets right now. There are times in the year when my hubby has to work really late and I always wait to eat with him. I’ve found I can prepare the cutlets in advance. They cook up super fast and are light for late evening dining. It’s so important to me that he has a home cooked meal made with love when he comes home. I serve it with a simple salad and that’s all we need. Thank you Baby for all you do.
