Mini Ravioli Lasagna

Talk about quick, easy and tasty! This Lasagna has it all!!! I was cleaning out the refrigerator and the freezer when I realized I had over bought ricotta and had a huge bag of mini ravioli in the freezer. Presto, an idea was born and boy was it easy. Layer the ravioli instead of the traditional noodles, why not? … (and you can change it up by using different flavor-filled ravioli!) Continue reading
First In The Garden Baby Green Salad With Ahi Tuna

I wait for this salad every year. There are no better salad greens than the little babies that pop up and need to be thinned out. Arugula so sweet you can’t believe it…and Boston Bibb…there was even little baby greens from our new Bok Choy crop. The only thing I wanted to pair this excellent salad with was a perfectly cooked piece of Ahi Tuna and a very fresh Artisan baguette we picked up this morning from the Farmer’s Market. Continue reading
Crispy Salmon Cakes With Dill Butter

My hubby makes the best salmon ever and when he makes it, it’s always a great big piece. Well I love that because the next day I make my Crispy Salmon Cakes With Dill Butter. Easy and full of flavor. The added dill butter really makes this dish a winner. Continue reading
Tri Colored Roasted Carrots

I love the variety of colors you can get from the world of vegetables. My hubby and I are committed to non GMO’s in our garden and in our refrigerator as often as we are able. It’s amazing the plethora of different varieties within the same family of veggies. So much different today than the plain veggies we had growing up. Continue reading
Eggplant & Ricotta Cheese Gâteau

Today is MEATLESS MONDAY! This dish is like a deconstructed eggplant lasagna or kind of like a layered Gâteau. Truly delicious and great for a Meatless Monday meal. Layered flavors make this not only pleasing to eat, but pleasing to the eye. My Hubby said it was the best eggplant he’s ever had. That always makes me smile! Continue reading
Mini Chocolate Lava Cakes

These little treasures are great to make and have in the fridge for a plethora of occasions. I serve them at dinner parties and give them as gifts in pairs every Valentine’s Day to friends and family. Today I made 40 of them for a bridal shower as a favor to take home and bake… but of course my Hubby and I had to have a little sample so I could show you how awesome and easy they are… (now there are only 38). The best part is they can be stored uncooked in the fridge for several months and you can pop them in the oven any time you want one. Here, have a bite… Continue reading
Crêpes With Spinach & Ham And Chive Butter

My Hubby loves it when I make him Crêpes! These versatile, very thin pancake-like wraps can hold up to whatever you put in and on them. Today I used leftover ham, sauteed spinach and a cheesy bechamel. I topped it off with some chive butter and it was heaven on a plate! Continue reading
Beef Stroganoff With Goat Cheese & Homemade Noodles

I love a good hearty Stroganoff and I always equated it with my German Heritage only to find out it’s really of Russian origins. Oh well… I make my Stroganoff with goat cheese and leave the sour cream on the table as an add in. The tang of the goat cheese gives this dish great flavor and depth. Great served with egg noodles…I made my own this time, but I also use store bought… Continue reading
