Tomato Bisque With Crab Butter

Tomato Bisque With Crab Butter
Call me crazy, but my idea of a romantic evening involves sitting on the back porch with a huge amount of king crab legs spread out on newspaper, lots of butter, a bottle of wine and the sun setting! Well, that’s just what we did last night. You know the knuckle part at the crab that holds all the claws together? I save that part and clean it the next day to turn into another meal. Since I also have copious amounts of tomatoes – lunch was a no brainier… Continue reading

Fresh Corn Salad With Avocado & Herb Dressing

Fresh Corn Salad With Avocado & Herb Dressing 3
It’s always sweet corn season in my house! It’s the only time of year I eat corn, so to elongate the season I buy lots of it, shuck it and freeze it until it’s all eaten! I tend to make too much every time I cook it so I can dress it up the next day or make a great soup. Well today I made a fresh and refreshing corn salad. It is not only appealing to the eye, it tastes great too… Continue reading

Zucchini & Bacon Fritters With Smoked Salmon Spread

Zucchini & Bacon Fritters With Smoked Salmon Spread
This was a wonderful lunch for my Hubby and I while we played Chinese checkers…(which is really a German game…)?! Since zucchini are pouring out of my garden, making them new and delicious is a must. I didn’t want to make the same old fried or spaghetti zucchini and since I love all things smoked I decided to make the whole dish a smoky flavored dish…Success!!! Don’t you love when that happens??? Tuna Tartare With Lime, Avocado and Pine Nuts

Tuna Tartare With Lime, Avocado and Pine Nuts
This is one of my favorite appetizers when we are in the city. I love to eat my tuna raw and when I am certain the tuna is super fresh I just chop it or pound it and eat it! Also to add to the simple excellence, I cut some square wontons in half and give them a super quick fry in some olive oil…Today Heaven!!!! Continue reading

Dutch Pancake With Lemon Curd Butter & Peach Compote

Dutch Pancake With Lemon Curd Butter & Peach Compote
This was the perfect breakfast to surprise my Hubby with this morning. It’s an easy and impressive way to serve a treat to the ones you love. Dutch pancakes take a little time to prepare and can be served a thousand ways. Made to be savory or sweet, today I made it with a lemon curd butter and a peach compote my mom made. Instead of making one big one which is the norm, I made 4 individual ones in my 6″ little cast iron skillets. Drizzle with the curd butter, top with powdered sugar and put a little fruit compote on the side! Continue reading

Mediterranean Hummus Platter

Mediterranean Hummus Platter
Who doesn’t love Hummus?! It’s like a meal and a snack! I read somewhere that making your own beans from dried is so much better for you so I started to make my own – starting with chickpeas. The crock pot is essential for this task and if you start them before you go to bed they’re done by morning. I store them and use them for all kinds of wonderful dishes…Hummus of course being the #1 motivation. Continue reading
