We’ve been going to a lot of Holiday Parties lately…So much rich food…Tonight we have a night off from the party-circuit and we’re taking it easy. We needed something healthy that has flavor – because you know, sometimes healthy is boring! But not these Salmon Burgers…they are healthy – an excellent source of omega-3 fatty acids, vitamin B12, vitamin D and selenium along with niacin, protein, phosphorus, and vitamin B6, not to mention choline, pantothenic acid, biotin, and potassium. Here’s another one of our favorite Latin dishes…Ropa Vieja…a Cuban dish meaning ‘old clothes’ that takes a flank steak and braises it in a rich tomato broth with vegetables until the flank steak is so tender that you can pull it apart with a fork. I typically serve this dish with Rice & Black Beans and Maduros on the side. Then the very next day we wrap up the leftover Ropa Vieja along with the Rice & Black Beans in large tortillas and have ourselves delicious burritos! Love those leftovers… Continue reading

I know, I know, Thanksgiving is right around the corner and I should be posting something I’m going to make for Thanksgiving but in my house it’s Taco Tuesday! My favorite day of the month and I just can’t help myself!! This is the time when I get to experiment with different flavors of tacos. On tonight’s menu are Pork Carnitas. Traditionally, Pork Carnitas are made with heavy cuts of pork such as shoulder or butt that are well seasoned and braised for several hours, then pulled apart. But today’s Pork Carnitas cook much quicker and are still just as delicious.
