Cocktail Corner: Mini Blue Bearable

Mini Blue Bearable
Thank you so much Nicole Oliver from Sinner or Saint Speakeasy (visit on Facebook) for finding a way to drink the gift of Pennsyltucky Moon Shine Corn Whiskey that my excellent Husband received as a gift. The word Moon Shine was a definite in this one. WOW! Professional Mixologist, Nicole spent over an hour in our kitchen concocting cocktails that would make this moon shine drinkable. Excellent job!!! She named the drink Mini Blue Bearable!!! I will definitely make this drink again (substituting the whiskey with vodka)! Thanks again Nicole… Please visit Sinner or Saint’s Facebook page. Summer Pasta Salad

Summer Pasta Salad

During my recent Ride the Farm biking adventure I picked up a slew of goodies! Today’s recipe includes the fresh green beans I bought…combined with some tortellini, grape tomatoes, diced prosciutto and mozzarella balls then soaked in a Honey Dijon Vinaigrette…they make a perfect summertime pasta salad. Hearty enough for a stand-alone meal but also light enough to bring as a side dish to a barbecue! Continue reading

Zucchini Spaghetti Shrimp Scampi

Zucchini Spaghetti Shrimp Scampi 2
The zucchini are here!!! All our plants are blooming beautifully and we love to eat them…like everyone I suspect. We love to make and serve them like spaghetti. What a brilliant little device we use! In any case, I decided to make them with my shrimp scampi sauce. So good I’m not sure my hubby will want his zucchini any other way…light to the tummy and pleasing to the palate! Continue reading

Country Breakfast

Country Breakfast

I recently shared one of my grandmother’s stand-by recipes: German Potato Salad. Here’s another one of her favorites! Mom Mom (Catherine) was a ‘meat & potatoes’ cook…she loved serving potatoes since a little goes a long way and there were many mouths to feed! I’ve taken her Country Breakfast recipe and adapted it for four servings. It’s hearty and filling and a great weekend breakfast! Continue reading

Tasty Tapenade

Tasty Tapenade 4
Although Tapenade is not a pretty dish, it is decidedly delicious! I like to make this when I have impromptu guests coming, because it is simple and always a crowd-pleaser for the olive lovers. The beautiful thing about grocery stores today is you can pick your olives at an olive bar and not purchase jar after jar after jar. Add some cheese, a food processor and a good cracker… Now you have an appetizer worthy of a King! Continue reading

Chicken Caponata

Chicken Caponata
Our Tri Club recently had a Ride the Farm event that I was lucky enough to enjoy with my husband and some friends. During the 22 mile bike ride we visited a few farmer’s markets and were able to purchase some beautiful produce…isn’t summer grand? All those fresh fruits & veggies! Heidi is so lucky to have a garden full of all those goodies in her own backyard…and I’m lucky to live so close to these great markets: Sorbello Girls, Visalli’s & Haynicz’s. In today’s post I used some of that lovely produce (fresh yellow peppers, onions and eggplants) to make Caponata and served it along with grilled chicken for a tasty weeknight meal… Continue reading

Me Casa Su Casa Red Snapper

Me Casa Su Casa Red Snapper
Because we are creatures of discovery and experiment, I decided to include you in my latest adventure. Always buying my fish already cleaned and ready for cooking by my wonderful fish monger, I thought when I bought this beautiful red snapper that after asking for the scales to be removed I could simply stuff it and presto… It was not so! Lol… Continue reading
