Shrimp Quesadilla

I made these little treats as a hearty appetizer to serve pool side for a girls swim date…small tortillas make perfect little wedges when quartered. Both flour and corn were served – the corn was a gluten-free option for one of my guests who doesn’t eat flour. Serve these with your favorite toppings…I paired these Shrimp Quesadillas with lime cocktails along with a yummy Black Bean Salsa. Continue reading
Beef & Lamb Gyros Salad With Grilled Red Onions, Goat Cheese & Tzatziki Dressing

I love a good Gyro and when I found the gyro meat package at Sam’s Club I was all in! Wanting to make it a little lighter than the wrap, I opted for a salad instead. Here is my version of this wonderful dish… (Oh, I made the Artichokes the night before and saved the hearts, but we ate the leaves as an appetizer with dinner). Continue reading

Cauliflower Crust Veggie Pizza With A Tomato, Red Pepper Sauce

I like a good cauliflower crust and I’ve made them before, but it sometimes takes more time than you have. Today I made lunch with lots of veggies and a great sauce that added a lot of flavor and depth. Continue reading
