When the corn in season is about to be no more…I buy a few dozen, cut the corn off the cob then freeze the corn to be used in the fall and winter. So when I make this rich and creamy soup the corn is about as fresh as it gets this late in the season. This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine.
