As Heidi mentioned on Tuesday, this week we’re sharing two healthy salads…today’s salad is made with Khorasan wheat, which comes from an ancient whole grain original to the Mediterranean region that is now also grown in Montana USA. I love a good pasta salad – especially when entertaining – because it’s simple, inexpensive and goes a long way. The great thing about this salad is there is only a little pasta and a lot of rough greens but when you add them to the hot pasta, they soften a little and soak up the vinaigrette. Pork Scallopini is the simplest of meals…it’s an Italian meal of thinly sliced meats dredged in flour, sautéed and served with a lemon sauce…very easy yet very tasty! I’ve eased up on the flour by dusting instead of dredging and roasted the lemons until they are edible and flavorful. They add the perfect punch of flavor to this classic dish. Continue reading

Baking your fries is so much healthier than frying them…and if you’re going to pile them high with Mexican beef and cheese it only helps to bake the fries!!! This was an indulgent lunch, but one I will not soon forget! Forgive me for sending you to two separate blogs of mine for the total finished product, but I promise it is worth the visits. Tomorrow is Cinco de Mayo! This day commemorates the Battle of Puebla, which took place on May 5, 1862 between Mexico and France in which the Mexican people were victorious…Believe it or not this day is celebrated more in the United States than throughout Mexico and although no one in our family is of Mexican heritage we still love to celebrate this day with our favorite Mexican foods…Queso Fundido just happens to be one of our all time favorites.
