Swordfish & Pepper Kabobs

We recently purchased a small charcoal grill to test the difference between gas and charcoal. I’m really impressed with the flavor impact a charcoal grill makes on food…especially when using a hardwood charcoal such as Cowboy brand (can be found at Lowes). I also bought Weber’s New Real Grilling Cookbook – and have made a few of the recipes. They’ve turned out so well (even with a little tweaking) that I would highly recommend this cookbook for anyone who loves to grill! On today’s menu are Swordfish & Pepper Kabobs…these flavorful bites are marinated in a creamy Dijon concoction and skewered with hearty red and green peppers then grilled for a quick and very healthy meal… Continue reading

Hot Reuben Crock Dip

Hot Reuben Crock Dip
Linda and I are only two of three sisters. Our third sister is the dip master – as in she loves to make dips. She has her go-to dips as we all do and this Reuben Dip is one of them… Sort of…??? Actually, I changed it because I was taking it to an outdoor pool party and I didn’t want to ask the hostess if I could use her oven on a hot day to heat my dip. This got me thinking of how I could make it in a way that it could just stay hot without putting out the hostess. By starting with the base of a Bechamel I was able to keep it warm for a long time and still have a consistent texture. It worked great and was a hit at the party! Sometimes you just have to think outside the box! Continue reading

Country Ham With A Rum And Coke Glaze

country-ham-with-a-rum-and-coke-glaze
Talk about good! Every year at Christmas my Hubby gets an enormous whole ‘bone-in’ ham from one of his clients. This year I decided to make a little different glaze than the standard brown sugar kind. I know lots of you probably already cook your ham with coke, but I always used ginger ale. Well, not this time… this time I used rum and coke. It was very good! Continue reading

Party Dips

Party Dips 1

Saturday night we had cocktails at our home with my parents and my Aunt Kathy and Uncle Fred. I love when they visit because we always have such a fun time. Well, before our dinner reservations at one of my favorite martini bars, I served cocktails and dips. I had just cooked a ham the day before, and the night before that we had my hubby’s excellent Dijon & Dill Salmon. So with my leftovers and some help from a few condiments I made some very tasty dips. Add some fresh toast points and the right presentation and you have a little party… Continue reading

Dijon Mustard & Dill – Not Fried Chicken

I love a good crispy chicken, but I don’t like frying my chicken in a lot of oil. So this is a dish I created to have the crunch without too much oil. I also love the flavor tang of this dish. I made these chicken thighs for a ‘cabaret dinner’ in honor of my husband’s birthday. Pulled straight from the oven, wrapped in wax paper and placed in a paper bag for the journey to our picnicking cabaret style at the Millbrook Playhouse. This chicken is delicious, crispy and moist. My hubby and I had a wonderful night stage side with dinner and wine from home. Happy Birthday My Love!    Continue reading
