Bacon & Eggs on Honey-Ricotta Toast

Bacon & Eggs on Honey-Ricotta Toast

Everyone in my family loves bacon & egg sandwiches for breakfast. We might not have them everyday but we certainly have them often. For today’s sandwich I made it just a wee bit different. Toasting up a hearty slice of Italian round loaf bread and slathering it with a little bit of creamy ricotta, drizzling on some fresh sweet honey and topping it all with crisp thick bacon and a fried egg. I loved it! I’ll be making these again and again… Continue reading

Grilled Pear & Bacon Spinach Salad

Grilled Pear & Bacon Spinach Salad

Growing up, my Mom made a spinach salad with bacon that was always a welcome addition to the table. I actually don’t have her recipe (shame on me!) but from what I can remember it was simply spinach lettuce, crisp bacon & thinly sliced red onion with a tangy vinaigrette. To change it up a bit I decided I wanted to add a twist with the addition of grilled sliced pears and a Maple-Bacon Vinaigrette. Mom – take a look and tell me what you think! Continue reading

Country Breakfast

Country Breakfast

I recently shared one of my grandmother’s stand-by recipes: German Potato Salad. Here’s another one of her favorites! Mom Mom (Catherine) was a ‘meat & potatoes’ cook…she loved serving potatoes since a little goes a long way and there were many mouths to feed! I’ve taken her Country Breakfast recipe and adapted it for four servings. It’s hearty and filling and a great weekend breakfast! Continue reading

Bacon & Tomato Fusilli

Bacon & Tomato Fusilli

Sometimes you want a pasta but not the old standby spaghetti & meatball kind… I love to experiment with all those different types of pasta found in the pasta aisle – combining sauces that will fit each little noodle to a Tee! This pasta is a wonderful sauce of bacon & pancetta with diced tomatoes served over Fusilli. Warm, comforting and absolutely delicious… Continue reading

Bundle Wrapped Pear Salad

Bundle Wrapped Pear Salad
If you’re anything like me you are already gearing up for the Christmas Holiday. I’m tweaking ideas for the many dinners we will be having and the easy dishes for the Big Day! It’s good to have a trial run with your recipes that you intend to make for your guests if you want to do new things. Knowing in advance how it turns out will just make you look like a pro to family and friends. It will also tell you if it’s too complicated for a crowd and how you can make it more simple. My hubby and I love this appetizer and we sometimes have it for our entire meal. I’m making this as the salad for my Christmas table with one pear instead of two, but it can also be served on a platter as an appetizer. I hope you enjoy this simple trial run with me… Continue reading

Bacon & Gruyère Quiche

Bacon & Gruyère Quiche 3

Quiche used to intimidate me. Whenever I would order it out, you would get this tiny piece for a lot of money. I always figured it must be very hard to make… until I made it! Truth is, nothing could be more simple or versatile. You can put anything in it and it comes out perfect every time. Now I make it when I have people for brunch and everyone wants to know what I did to make my quiche so light and fluffy. Well, this is what I do… Continue reading
