I was in the mood for an open faced melt, but didn’t want tuna. Well I had just recently made my Chicken Parmesan Croquettes and still had some of the mixture left over, so I made it into an open faced Chicken Parmesan Melt! Perfect for a little lunch with a salad on the side. Continue reading

Romaine & Carrot Salad
Here’s a quick & simple salad to accompany any meal. Sometimes the simplest ingredients make for a perfect combination: Crisp Romaine lettuce, sweet shredded carrots drizzled with a savory Honey Dijon Vinaigrette. It just doesn’t get any easier! Continue reading
Pocket Pork Chops With Pecan, Sausage & Mushroom Stuffing

I love pecans in almost anything, but when I put them in this stuffing it just sent these chops to a whole new level. Making the simple pocket saves the struggle of stuffing the whole loin and is a simple solution for a quick dinner night. Stuffing the whole loin is great for a crowd, but the pocket is great for 2 -4 people for dinner! Continue reading
Roasted Butternut Squash, Red Onion & Prosciutto-Ricotta Flatbread
Roasted Butternut Squash is one of my favorite things to eat. It’s chock full of fiber, vitamins A, E & C, potassium, manganese & magnesium. And it tastes delicious…what better fruit (yep, it’s a fruit!) to put in your body. On today’s menu is a Roasted Butternut Squash, Red Onion & Prosciutto-Ricotta Flatbread. It’s great for lunch or dinner…easy to make…easy to eat! Continue reading
Corn & Pepper Jack Cheese Chowder

On Wednesday I made a terrific Spinach & Creamy Spinach Soup. Today’s soup is equally delicious but with a kick! It’s the perfect blend of sweet and hot! The corn brings this beautiful sweetness at the front, then after two or three bites you start to notice a little heat! A very balanced corn soup. For the corn broth, click on the link above and follow the directions.
Kung Pao Chicken
Kung Pao Chicken is a traditional Chinese dish believed to have originated in the 1800s in the Sichuan Province. Diced marinated chicken, peanuts & chili peppers along with Sichuan peppercorns are the original ingredients. Sichuan peppercorns are available for online purchase but I’m all for ease and simplicity. So, for today’s recipe I’ve adapted those ingredients and used ones directly out of the local supermarket. Today’s chicken is marinated in a mildly spicy combination of Asian Szechuan sauce, hoisin sauce, Tamari soy sauce & five spice powder. To pump up the health factor, tri-colored peppers & broccoli have been added to the stir fry. End result? Delicious! Continue reading
Corn & Cream Spinach Chowder

Corn season is coming to an end. Soon there will be no more husking and no more corn soup. So this week I made two different corn soups to keep my corny taste buds hopping…Lol!!! This mild and flavorful corn and spinach soup really hit the spot. Creamy, salty and sweet! Continue reading
Cowgirl Tacos
It’s Taco Tuesday! My favorite day of the month when I experiment with new and different flavors for tacos…This is another taco that I found on a menu from Fuego Tortilla Grill. I’ve never actually been there but I sometimes will spend time just perusing restaurant menus to get ideas and this one grabbed my attention. It’s called Cowboy Tacos and it listed Dr. Pepper BBQ sauce as one of it’s ingredients…that sounds tempting…doesn’t it!? But why let all the Cowboys have the fun? Here’s my spin on this taco which I’m gladly renaming Cowgirl Tacos! Continue reading
Crab Filled Ravioli With Marinara & Pesto

A little trick I use when I want to make ravioli and I just don’t have time to make my own…wontons! You heard me… so I filled them with a beautiful crab mixture, boiled them and presto they were ready! My Hubby loves them, I love how tender and thin the dough is and if I have guests, they think I worked all day… Perfect all around! Continue reading
