I used to get this pizza in Philadelphia and I loved it. No shortage on garlic -it was really good. Well I was thinking about it this week and decided I would try to make it how I remembered it. Mission accomplished! Continue reading

On today’s menu is another delicious summer salad – crisp corn on the cob charred to perfection and mixed with a flavor combination that can’t be beat – fresh diced zucchini, black beans and the sweet tang of mango! Drizzled with a spicy vinaigrette then topped with cilantro and Cotija cheese. Oh my goodness!! Continue reading

The corn is so sweet this time of year and we always buy more than we can eat so I end up making chowders mostly (Creamy Corn Chowder). Well this time I made a bisque and my hubby called it outstanding! Continue reading
It’s Burger Time! Having a burger doesn’t mean you have to eat unhealthy! I love Ratatouille – a traditional French vegetable stew made with eggplant and zucchini and other healthy veggies. With the remaining Jersey Fresh Produce from my recent Ride the Farm event, I’ve deconstructed a Ratatouille and roasted all the veggies together, grilled some seasoned chicken burgers and topped them with the roasted ratatouille – making this meal not only absolutely delicious but definitely healthy! Well, this was a winner! So full of flavor and depth. The rice soaks up every bit of flavor you add and richly delivers them to you with every bite… Continue reading

Thank you so much Nicole Oliver from Sinner or Saint Speakeasy (visit on Facebook) for finding a way to drink the gift of Pennsyltucky Moon Shine Corn Whiskey that my excellent Husband received as a gift. The word Moon Shine was a definite in this one. WOW! Professional Mixologist, Nicole spent over an hour in our kitchen concocting cocktails that would make this moon shine drinkable. Excellent job!!! She named the drink Mini Blue Bearable!!! I will definitely make this drink again (substituting the whiskey with vodka)! Thanks again Nicole… Please visit Sinner or Saint’s Facebook page. During my recent Ride the Farm biking adventure I picked up a slew of goodies! Today’s recipe includes the fresh green beans I bought…combined with some tortellini, grape tomatoes, diced prosciutto and mozzarella balls then soaked in a Honey Dijon Vinaigrette…they make a perfect summertime pasta salad. Hearty enough for a stand-alone meal but also light enough to bring as a side dish to a barbecue! Continue reading

Born out of my love for sundried tomatoes (and not wanting to turn on the broiler)… I made this cheese spread to be a cold version of my Baked Sundried Tomato Dip. It was a real hit with my guests and a definite go to for me in the future. Continue reading
It’s Taco Tuesday! On today’s menu is a simple and very healthy spin on the ‘regular taco‘…Taking all the taco fixings and topping them onto a wedge – then drizzling on a bit of Creamy Avocado Poblano dressing…yum…another great Taco Night!! Continue reading
