Our local pizza & sandwich joint has a very tasty Flank Steak Panini on their menu that I’ve been ordering for years. I finally decided to just make it at home – tweaking it until it was just right. I’ve never been a big fan of flank steaks because they end up being very fatty…so I use sirloin instead, marinating it and grilling it and adding sautéed marinated red onions, sharp cheddar cheese, tomato, arugula and a smear of black pepper aoili…all piled on toasted rustic sourdough bread…This is the perfect pick-me-up when I’m in the mood for a tasty lunch! Grilled Vegetable Platter

This classic dish is mouth-wateringly delicious! The great thing about it is that you can make it again and again with all different kinds of veggies…one day it could be eggplant & peppers with red onions, another day make it with asparagus and zucchini…you’ve got grilled broccoli or cauliflower mixed with so many different combinations…it’s endless! Southwest Chicken Chopped Salad

Recently when visiting Washington DC we stopped for lunch at the Sculpture Garden Pavilion Cafe at the National Gallery of Art. On the menu was a Southwest Chicken Salad that not only looked good but tasted delish! I wanted to go back there the next day since I couldn’t stop thinking about it…but alas…we ended up at Hill Country BBQ – another great place to eat if you’re a big fan of brisket & ribs. But I couldn’t get that salad off my mind…so of course I had to make it at home. It turned out fabulous! The combination of flavors was just perfect…perfectly grilled southwestern-spiced chicken, fresh avocado, charred corn, black beans, crispy shallots, cotija cheese all piled on fresh salad greens and drizzled with chipotle-ranch dressing and bbq sauce…oh my!
