Now on to today’s Fiesta Friday contribution! Irish Stew is one of the very first dishes I make every year when it starts to get a little chilly in the fall. This is a stew we made at our restaurant many years ago and one that I still make at home today. It is more simple than our restaurant version because I use a condensed consume instead of making a demi-glace that would take 2 – 3 days to make, but it is perfect for my home version.
