For lunch today I’ve prepared a hearty delicious salad. The traditional Cobb salad is typically made with chopped salad greens, tomato, crisp bacon, boiled, grilled or roasted chicken breast, hard-boiled eggs, avocado, chives, Roquefort cheese, and red-wine vinaigrette. Recently when visiting Washington DC we stopped for lunch at the Sculpture Garden Pavilion Cafe at the National Gallery of Art. On the menu was a Southwest Chicken Salad that not only looked good but tasted delish! I wanted to go back there the next day since I couldn’t stop thinking about it…but alas…we ended up at Hill Country BBQ – another great place to eat if you’re a big fan of brisket & ribs. But I couldn’t get that salad off my mind…so of course I had to make it at home. It turned out fabulous! The combination of flavors was just perfect…perfectly grilled southwestern-spiced chicken, fresh avocado, charred corn, black beans, crispy shallots, cotija cheese all piled on fresh salad greens and drizzled with chipotle-ranch dressing and bbq sauce…oh my! This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine. It’s always sweet corn season in my house! It’s the only time of year I eat corn, so to elongate the season I buy lots of it, shuck it and freeze it until it’s all eaten! As Heidi mentioned on Tuesday, this week we’re sharing two healthy salads…today’s salad is made with Khorasan wheat, which comes from an ancient whole grain original to the Mediterranean region that is now also grown in Montana USA. This particular brand is Kamut – organically grown – with a rich, nutty flavor. Combined with caramelized onions, mushrooms, sun-dried tomatoes and spinach and topped off with feta cheese and pine nuts, it’s an explosion of flavor in every bite! In the mood for a salad!? As I’ve mentioned quite a few times, I’m a huge fan of salads…here’s a classic Chef Salad that’s sure to please!
I love eating salads for lunch…I try to make a variety so I don’t get bored. Since roasting veggies just makes them taste so much better I added some roasted green beans and red onion wedges to today’s salad and then topped the salad with toasted pine nuts, shaved Parmesan and drizzled on a champagne vinaigrette….just lovely!
