I love the addition of fruit in my salads. So today I’ve taken a mango, roasted it along with carrots and popped it in a hearty Fall Salad! Easy and delicious… Continue reading
This tasty fall salad actually reminds me of spring. I served it recently at a luncheon I hosted. Since I love to decorate my dining table to the 9’s as often as I can, I invite different groups of women to a lunch and we have a wonderful, elegant time. Sometimes it’s for charity, and sometimes just because. This time it was for all the wonderful women who work for my husband that make his office run like a well-oiled machine. I had to ask the boss to let me have them for a little while…It was a lot of fun and I was thrilled to show them my appreciation for all they do. Continue reading
It’s always sweet corn season in my house! It’s the only time of year I eat corn, so to elongate the season I buy lots of it, shuck it and freeze it until it’s all eaten! I tend to make too much every time I cook it so I can dress it up the next day or make a great soup. Well today I made a fresh and refreshing corn salad. It is not only appealing to the eye, it tastes great too… Continue reading
As Heidi mentioned on Tuesday, this week we’re sharing two healthy salads…today’s salad is made with Khorasan wheat, which comes from an ancient whole grain original to the Mediterranean region that is now also grown in Montana USA. This salad is even hearty enough for a Meatless Meal… Continue reading
In the mood for a salad!? As I’ve mentioned quite a few times, I’m a huge fan of salads…here’s a classic Chef Salad that’s sure to please!
I love eating salads for lunch…I try to make a variety so I don’t get bored. Since roasting veggies just makes them taste so much better I added some roasted green beans and red onion wedges to today’s salad and then topped the salad with toasted pine nuts, shaved Parmesan and drizzled on a champagne vinaigrette….just lovely!
Today we’re revisiting one of my favorite dishes that my mother used to make…Salad Nicoise…a French version of an antipasto…here is my version of Mom’s Salad Nicoise… Continue reading
With all the business of the Christmas Holiday I’ve been engaged with so many activities that cooking has not been a priority. Therefore, today I’ll be revisiting a simple salad that I made for Christmas last year. I hope you enjoy it again… Continue reading
I love a good Potsticker! For a healthy twist to these little gems I used chopped cauliflower and shaved Brussels Sprouts, then I put them over a bed of spinach for a little more yummy goodness. Continue reading
