Saturday night we had cocktails at our home with my parents and my Aunt Kathy and Uncle Fred. I love when they visit because we always have such a fun time. Well, before our dinner reservations at one of my favorite martini bars, I served cocktails and dips. I had just cooked a ham the day before, and the night before that we had my hubby’s excellent Dijon & Dill Salmon. Wow! What a great way to start the new year… This has been a wonderful adventure for Linda and I. Working together has been a long time desire for us both and being ‘The Fabulous Fare Sisters’ is something we are very proud of. My idea of fast food when I was raising my kids and too busy to plan a meal was to pick up a rotisserie chicken and go through the Wendy’s drive through for baked potatoes with broccoli (no cheese). It was with leftover chicken that this dish was born.  Simple, delicious and a winner with the kids. I still use rotisserie chickens when I am short on time because they are so full of flavor. On New Year’s Eve we had some family and friends over for appetizers, dessert & cocktails…everyone had a wonderful time! For the big event, my sister-in-law Maria and my nieces Olivia & Michelle made two delicious Key Lime Pies. I was able to take a break from the cooking and baking and asked them if I could blog their creation… the pies turned out absolutely wonderful…rich, creamy and tarty with just the right amount of sweetness. Sometimes a grilled cheese tastes like the best tasting sandwich in the whole world. As a little girl in kindergarten back when kindergarten was 1/2 a day, I would come home and want a grilled cheese sandwich (American cheese) and tomato soup (Campbell’s). This rainy Northeast weather brings the opportunity to make hearty soups. Recently Heidi served her family a Creamy Pumpkin Soup, a Creamy Mushroom, Sherry & Goat Cheese Soup and a Hearty Chicken & Ham Soup and I served my family Sopa de Carne. Well this week, one of my sons was really not feeling well, and as it’s a well known fact that Chicken Soup is the cure-all for everything, I decided to make him a hearty healing pot of soup.
